The line outside Julia’s diner extended to the laundromat on the other end of the block, then curved and disappeared around the corner. The usually quiet block of suburban Chicago was now filled with white noise of dozens of simultaneous conversations. Many of the patrons had reservations they’d made over three months ago, some of them had lined up since noon hoping to capture one of the inevitable no-show table.
Isolated from the chatter outside was the ordered chaos within the diner, where Julia and her staff rushed to put the final touches before opening. The bus boys checked every table and straightened any disordered utensils. Her sous-chef went around inspecting the prep work across the kitchen. Despite the stark increase in staff size over the past few months, her restaurant had found a way to work smoothly.
Her sudden growth in popularity had been caused by a small, innocuous addition to the menu. Printed at the bottom of the last page of the laminated menu was “The Moments Collection”, with only three dishes offered — a chicken soup, a souffle, and a mulled wine.
However, the Moments Collection had a secret. Anyone who ate a dish off of the Moments Collection would get to re-experience a core memory. The chicken soup tasted of a Christmas morning opening presents as a child. The souffle was a first kiss at the end of a lovely first date. The mulled wine the feeling of laughing away the evening with your friends in your twenties. Once she’d added these inconspicuous dishes to the menu, word had spread quickly. The diner had gone from a neighborhood spot to a Chicago secret to now every food critic’s October edition cover.
While Julia did not have time to interact with most of her customers these days, there were a few dozen repeat visitors that she had started to memorize the faces of. There were three regulars that Julia remembered quite distinctly. There was the young Wall Street trader that would come in every Friday evening and order the chicken soup. His sharp, expensive looking suit would stand in sharp contrast with the humble bowl of soup in front of him. There was the silver-haired woman with elegant hair-dos who’d come on Wednesday afternoons. She’d order the mulled wine, and sip it for hours, her eyes closed and a delicate smile on her face. And there was the businessman, with thinning hair and a tan line on his ring finger that grew fainter every week, who’d invariably get the souffle every Tuesday morning visit.
Every Sunday night, after her full week of twelve hour shift, Julia would go home and make herself the same meal — her mother’s spaghetti with tomato sauce. This one was also special like the Moments Collection. Even so, it had never ended up in the restaurant’s dish list, a little too dear to Julia to be committed to the menu. It carried the memories of weekend afternoons spent cooking with her mother, joyfully adding and re-adding “just a little more garlic” to the sauce until the it was more garlic than sauce itself.
Julia developed the habit of greeting the regulars herself, despite her growing kitchen and wait staff. As is common with hospitality, she never learned their names. But on every Sunday night, as she yet again made her mother’s spaghetti, she felt as though she was closer to her regulars than people in her own life.
Over time, the influx of customers reached a steady state, and the kitchen and staff found a groove that had the restaurant running smoothly. Her regulars came once a week, then twice every week, then every other day, and before long, they were daily patrons of her diner. They’d sit on the same table, order the same thing, and stay a little longer every time.
The complaints started small, and piled up over time. About once a week, a dish would be sent back to the kitchen by a dissatisfied customer — almost always because it didn’t taste the same as their last visit. This wasn’t cause for immediate alarm — each week was bound to be different, of course, with the changing seasons and moving to more reliable vendors over time. But this occurrence grew from once a week to twice to every other day to daily to eventually multiple complaints a day.
Julia started to wonder if it was not the dishes that were the problem. Why was it that it was overwhelmingly repeat customers that were dissatisfied? She had a nagging feeling that it was no coincidence that her Sunday evening ritual had grown longer and longer as well — getting the memory of cooking with her mother now needed more garlic, more fonde, more time…
She tried introducing new dishes – bread pudding that felt like holding a newborn, morning tea that tasted of watching the sunrise from a mountain peak, a vegetable roast with the memory of high school graduation. This appeased some customers, but not many— for most of them only wanted their original dish fixed to what it had originally been.
Troubling times approached the diner when Julia took the original dishes off the Collections, not knowing anymore how to reduce the complaints. The response to this was overwhelmingly negative. It started with strongly worded emails, then angry reviews, and soon there were people shouting at the front of house almost every day. Julia was stuck — to put the menu items back on was to invite constant dissatisfaction and criticism, to leave it off seemed to create a growing angry crowd of ex-customers. Sunday evenings no longer gave her the mental break they once had, and Julia felt herself getting crankier and more burnt out with every passing bad work day.
At the first threat of physical violence to her employees, Julia called for a hiatus on the restaurant, cancelled upcoming reservations, and shut the doors of the diner for the foreseeable future.
Now without a famous restaurant to run, Julia devoted herself to re-creating the spaghetti with tomato sauce memory to its original intensity. But nothing she did worked — no amount of adding stock, adding tomatoes, adding onions or garlic or whatever else her mother used to do. At the end of one particularly unsuccessful and long day, Julia curled up on the couch and scrolled through photos of family vacations. It had been a while since her mother had passed away, but Julia stared at her photos and wished that there was some secret clue her mom had left her to solve her problems now.
About a couple of weeks after the closing of the restaurant, Julia’s nephew came to stay the weekend with her. Julia considered herself no good with kids, but with the excuse of being too busy with the restaurant gone, her brother’s insistence had won out. When it came time for dinner, Julia proposed cooking her famous family spaghetti, to which her nephew scrunched his nose. He didn’t like tomatoes, he said — which was absurd to Julia, and added to her general consternation about the nature of children. He demanded they make mac-and-cheese, and Julia agreed, mostly to hope to avoid a tantrum.
She gave her nephew the job of shredding the cheese (the thing he was least likely to injure himself doing), which he did with a focused frown that made her smile. She cut up some scallions from her slightly-ignored home garden, and reached for the fusilli instead of a spaghetti from the pasta cabinet. By the time they were assembling the dish, with her nephew on a step stool next to her, Julia felt something she hadn’t in a while – a new moment, not a memory. This one: The joy of cooking for someone you love.
Sitting on the couch with her nephew later that evening, an idea was brewing. Her nephew cried out slightly at eating the pasta way too fast while it was way too hot, and they both laughed at his antics, and she realized then that she knew how to re-open her restaurant.
Julia’s diner was re-opened for just a few weeks. There were no reservations nor any walk-ins — one had to be invited to dine. All known invitees were previous patrons, and there were yet again only a handful of dishes available. Julia had taken particular care to invite back her regulars and prepare specific dishes for them. For the wall street trader, the tomorrow’s promise custard, with the taste of finding family in unexpected places. For the silver-haired lady, relationship wine, capturing the joy of making new connections. And for the businessman, the open hearts salad, a simple dish that carried the courage to love again.
They each came once, ate in silence, and left without a word. They didn’t return.
Once all invited patrons were served, Julia’s diner closed again — this time with more permanence. The sign on the door front thanked the neighborhood for its eight years of unfailing patronage and promised to re-open with something new. And indeed, in its place today stands Julia’s Ice Cream Parlor, beloved by the locals for its timeless offering of Present Moment Sorbet.
